Cashew Cheese

Since I'm a devoted cheese lover and also, very unfortunately, lactose intolerant, I am always looking for awesome substitutions for dairy products. Usually it fails. If you've ever tried dairy free cream cheese, you know what I mean; if you haven't, don't.

I got the idea to try out cashew cheese from my vegan boss because he made some sick lasagna with it. The recipe I tried was more tangy and salty than his was, but I dig it. Also, I think it tastes better the longer it sits in the fridge, so that's a plus.

I found the recipe here, but I couldn't find any yeast so I skipped it.
